Can anyone see an issue with say running EFW in a virtual machine on a windows server and using that VM as if it was a standalone appliance? i.e. all traffic from the hardware server NIC going to the VM and then running it as normal with all windows server traffic going through it?

You shouldn't have any prblems running EFW inside a VM, I currently run mine inside a xen DomU without problems.
