Initial setup questions

Our current setup had a hardware Juniper FW to our co-lo with another Juniper FW which failed. Prices are rediculous, so currently I have a linux box with IPtables just allowing things as needed. But I would like sometihng similar to what we have now with our site to site. I have an endian running here in the office on a 2nd public IP and using him to get out and test, and very happy with the app so far, so next is the VPN.
Can I setup a 2nd endian at the co-lo, then just setup a constant tunnel for traffic here to go over that tunnel without the need for a client connect, etc? That will come later so if someone is out in the field, they can connect and have full access, but can the endian do a simple site to site constantly connected VPN and if so, are there simple docs, etc.?
Thanks.
