I see that this is an unanswered question since 2009 so I'm beginning to think that it's not possible, but I'd like to know if anyone can tell me how to recover spam from the default quarantine?

You are right deni1738.
But there is a workaround for this.
You can define an email address to which spam will be redirected.

The module quarantine under services is available only on the Enterprise product.
In order to release the email quarantined you can do it from SSH with:

Code:
amavisd-release <spam-email-id>
