Is it possible to somehow log the user who is trying to reach the blocked site?  I am using non-transparent mode and I would like to somehow capture who is navigating to the blocked sites is possible.

I don't know if endian have an option exactly to your need but you can always check content filter log in endian. On the other hand, you could try your hand on various dansguardian logs analyzer/addons available on web.

I am trying to use an analyzer, but in the access.log for dansguardian it does not capture the user.

I solved this by changing the auth-plugin from auth plugin IP.  to Auth-plugin to proxy-basic.
